As afternoon gives way to evening, sweet shops along the roadside in Sonar Para come alive with customers craving freshly fried jalebi. In large, bubbling pans, confectioners skillfully shape the batter into circular spirals, fry them until golden, then dip them in sweet sugar syrup. The aroma of hot jalebi spreads through the air, drawing people of all ages to the stalls. Some buy the syrup-soaked treats to take home to their families, while others savour them piping hot right outside the shops.
